The potato is the EGOT winner of the culinary world, it as versatile as the F word if you ask me. Baked, fried, mashed, diced, sliced, shredded, you can serve them anyway with damn near anything. You can fancy them up or dumb them down no matter what the occasion. You can eat one hundred percent of the potato, there is never any waste so its totally environmentally friendly, what a responsible starchy vegetable. This week I’ll give you some fun recipes and facts all about the Notorious POT……starting with this simple yet classic favorite
Whipped Potatoes

3 # potatoes + 6 c Cold water + 1 T salt + 1/4 C butter + 1/2 C heavy cream + 1/4 C olive oil


peel and rough chop potatoes put in pot with cold water and salt. turn heat to high bring to boil cook 15 to 20 minutes until potatoes are tender. Drain potatoes place back in pot. In separate pan Heat heavy cream, butter and olive oil. Pour cream mixture Over potatoes and mash with a heavy wire whisk or potato masher taste for salt and add accordingly.  


Whipped potatoes are a very personal thing for people, some like chunky bumpy, some like smooth and creamy. It’s entirely up to you how you season and mix your spuds. I suggest running them thru a food mill or ricer before adding the cream mixture if you want them nice and velvety. Find the cream to fat ratio that is to your liking and make the best damn potatoes you can make
