Yesterday my husband needed comfort food

I needed to use up a bunch of vegetables in my fridge. So I made spicy peanut butter pad thai. It was delicious especially served over some rice noodles. It was everything we needed.


1 lb chicken or beef (or neither)

1 zucchini diced

1 yellow onion diced

1 red bell pepper diced

2 cups broccoli

2 carrots diced

2 tsp ginger

2 cloves garlic

1 cup vegetable, beef, or chicken broth

1/4 cup crunchy peanut butter

3 tbs soy sauce (I prefer low sodium)

1 tbs sesame oil

1 tsp red pepper flakes


If you choose to add meat cook that in a skillet first. Once your meat is cooked add everything else to the skillet and cook together. Let this all cook until the vegetables are soft and the peanut butter is reduced. Then serve over white rice or rice noodles.

Delicious, easy, and one pan cleanup. I served his alongside a glass of whiskey.
